Our Lamb is sourced solely from Farmer Tim’s property in Pyramul (Mudgee). Tim is our Founder Murray’s cousin.
Lamb is sold by the side (half a lamb = Medium Pack) or a whole (Large Pack), both of which come professionally butchered into cuts and individually bagged & labeled for your convenience. A side of lamb usually weighs between 8-11 kg butchered or double for a whole.
As you will see in our order form you can select how you would like your lamb butchered. Farmer Tim’s lambs are processed between the ages of 6-12 months and are sometimes, depending on the season, what is referred to in the trade as Sucker Lambs.
Like with our Grass Fed Yearling Beef our Grass Fed Lamb is a healthier meat for you to consume and contains less inter-muscular fats so doesn’t like being overcooked and loves to have a good rest off the heat prior to being devoured.
