These individual grass fed and grass finished heavily nutrient dense beef shins are like 1 giant Osso Bucco! If you want to get really sporty you can French them and turn them into “Thors Hammer” ready for the most impressive slow cook you can possibly serve!

Other options would be to take all the meat off them and casserole them with the bone in the juice for that delicious marrow flavour!

p.s. You will have to French it yourself to get the “hammer look” but trust me it is very easy! First run the knife around the shin at the height you want the bone to be exposed then cut down the bone 3-4 times as you circle it to the initial cut line. The meat you cut off can be cubed and added to the slow cook!
